Dal Tadka


Dal Tadka is a traditional Indian lentil dish, popular in northern India. It is a fragrant combination of cooked yellow lentils (toor dal) with a spiced tempering (tadka), which gives the dish a rich flavor and aroma. Served with rice, roti, or paratha, often with a smoky flavor created by using smoked tadka.

Method of Preparation

Tur Dal
Step 1: Prepare the lentils with the spiced base

1. Rinse the toor dal 3–4 times with water. Soak for 30 minutes for softness.

2. Heat 2 tbsp ghee in a deep pot or pan over medium heat.

3. Add cumin seeds, bay leaf, and asafoetida. Let the cumin crackle (10–15 seconds).

4. Add green chili, grated ginger, and minced garlic. Sauté for 30 seconds until fragrant.

5. Add finely chopped onion and fry until golden-brown (5–7 minutes).

6. Add tomatoes and cook until they soften and start releasing oil (4–5 minutes).

7. Add ground coriander, red chili powder, turmeric, garam masala, and crushed kasuri methi. Fry for 1–2 minutes until aromatic.

8. Add the rinsed lentils and 2.5 cups of water. Add salt (1 tsp or to taste). Mix well.

9. Cover and cook over medium heat for 30–40 minutes until the lentils are soft and slightly mushy. Stir occasionally and add hot water (½–1 cup) if needed for desired consistency.

10. Mash the lentils with a spoon or whisk for a creamy texture.

Step 2: Prepare the final tadka

1. In a small pan, heat 1.5 tbsp ghee over medium heat.

2. Add cumin seeds and asafoetida. Let the cumin crackle (5–10 seconds).

3. Add dried red chilies, garlic, and ginger. Fry until golden (20–30 seconds).

4. Add Kashmiri red chili powder and a pinch of turmeric. Quickly stir and pour the tadka over the prepared dal.

Step 3: Smoking (optional)

1. Place a small steel bowl in the center of the pot with dal (not touching the bottom).

2. Heat a piece of charcoal over an open flame until red-hot.

3. Using tongs, place the charcoal in the bowl.

4. Pour ½ tsp ghee over the charcoal—it will smoke. Immediately cover the pot for 2–3 minutes to infuse the dal with smoky flavor.

5. Remove the lid, discard the charcoal bowl, and gently stir the dal.

Serving:

Sprinkle the dal with fresh cilantro and add butter if desired. Serve hot with basmati rice, roti, paratha, or naan.
